I have 3 data series that I want to plot on separate axes on a 3d plot, but
excel
does something weird when I try to do this.  Is this possible to do in
excel?  Any pointers?  Thanks

Excel does not do true 3D scatter charts.  If you need something more
than a surface/contour chart, you might try Andy Pope's
(http://andypope.info) simulated 3D chart, which coerces a 2D scatter
chart into the role, using lots of worksheet formulas and a few dummy
series that fill in for axes.

I don't quite understand your question, but I can give you a pointer to
Tushar Mehta's primer on 3D charts.  http://www.tushar-mehta.com/, look for
Charts/3D Surface on the left side.
