Hi Roy,
Do you have grouped sheets turned on, if you do you have been destroying
loads of data on several sheets at the same time. To ungroup right click
on a worksheet tab and then Ungroup Sheets. If you don't see
ungroup sheets then fortunately that is not the problem.
The usual cause of grayed out menus is having sheet or workbook
protection turned on. More details in

No grouped sheets, no security. Just a plain jane spreadsheet that needs to
be printed landscape.
