For reasons known only to Microsoft, the default Number of copies
displayed in the File/Print... dialogue box (select via menus or use
Ctrl-P) is set via the printer's setup even though it has nothing to
do with your printer!
In order to set the Number of copies to a default that you want (or
reset it to 1 if it has mysteriously changed to another number) do the
following:
1. Select the worksheet for which you want to set the default number
of copies. Note that this number is specific to each individual
worksheet.
2. Select the File menu
3. Select the Page setup... option. This will open the Page setup
dialogue box
4. Ensure the Page tab is selected
5. Click on Options. This will open your default printer's properties
dialogue box.
6. Because this dialogue box is specific to your printer the options
will vary from printer to printer. However, somewhere within this
dialogue box you should be able to find a spot that allows you to set
the number of copies.
7. Set the number of copies to the number that you want to be your
default.
8. Click each OK until all dialogue boxes are closed.
9. Save your workbook.
When you open your workbook you will find that the Number of copies
for each worksheet will default to the number you set above. If you
want to test this, open a blank workbook with several blank worksheets
and follow the above instructions.
When you next open the printer's properties dialogue box, it picks up
the value for the number of copies from your worksheet and then passes
this value back to the worksheet when you close the dialogue box. Your
task, should you wish to undertake it, is to find where Excel stores
this value (and all other worksheet specific settings such as page
headers and footers, display of zeros, etc.)

Thanks for this link. You have a number of very useful tips that I
will gladly add to my private store.
I still do wonder, though, where Excel really stores its settings.
Yes, we can change (some of) them through Tools>Options... etc. But
once we have changed them, where are they kept?
