How do I set the default option for Excel to display the
formula in a cell when that cell is selected rather than
the value? I have Office for Mac OS x version.

Hi Ken,
Tools, Options, View,  Formulas

You can toggle on a PC with  Ctrl+`  accent grave

I expect that would equate to the key in the lower
left and the accent grave to the left of the number row.
