How do I revert to Excel 97-2003 from the 2007 version?

I recently purchased the Office Standard 2007 suite of programs.  However I
am very reliant on Excel 97-2003 which I have used extensively for accounting
and home finance uses.  I am utterly lost with this new layout of the
toolbars on the 2007 version and cannot locate various controls which were at
my fingertips with the older version.  Is there any way I can continue to use
the old Excel 97-2003 toolbars?
