Where is the default workbook found (path/filename) in Excel 2007?  In
E-2007, I tried opening my old one, Book.xls (from E-2000); it was not the
same thing I get when I start a new workbook in 2007.

Perhaps in Excel 2000 you had a customized BOOK.XLT located in your XLSTART
folder?

That was the only method of changing the default New workbook through Excel 2003

I don't run 2007 but could be similar.
