Highlight the sort range and sort by your lowest three criteria. Then
sort again choosing your highest (main) criteria.
Alternatively, you can join two or more fields together in a temporary
column, and include this in your sort range as one of the sort fields.

and Excel 2007 will increase the number of sort levels when it's
available next year.
