How do I put the present date on a cell such as A1 so that any day I open
the file, the correct date is shown.

Brilliant. Thanks. One question though; why isn't date stamping available in
the "Tools" or "Insert"?

It's available in Insert>Function.
But if you want the date to remain the same once it's put there, you need to press CTRL+;
=TODAY() will update each time you open or calculate the workbook
