Why is it when I want to find and replace something in a cell such as one
character and make it red, the whole cell is red. Am I doing something wrong
or is this just the way Microsoft does it?

You're not doing anything wrong.

You'd have to go character by character (and color by color and font style by
font style and font size by font size and....)

If you want to preserve the original formatting.
