Why is it that in a particular Excel spreadsheet, whenever I paste
"3/20/2008 9:34:00 AM" into it, I get "Tuesday, March 20, 2008" (or
whatever)? How can I change this behavior? (I didn't create the
Excel spreadsheet)

Change the formatting of the cell. Select the cell. Then press Ctrl+1 and
select the Number tab. Then select date. Then select the format you want.
Instead of date, you can also select custom and create your own date format.
It's also possible that whatever you're pasting has a format associated with
it and it's that format you're seeing. If so, when you paste, do a paste
special and select values. If you see a number after doing so, format the
cell as a date.

Format>Cells>Number>Custom
m/dd/yyyy h:mm:ss AM/PM
Pre-format before pasting your copied data..
