Has anyone in Infopath Data Connections used a SharePoint libary or list to
store data?
If so how do you use a Data Connection to retrieve that same data from the
SharePoint library?

I have been able to Submit my data to the SharePoint libray or list but
can't figure out how to retrieve.

If you are publishing your form in SharePoint library then you dont need to
worry about how you would retrieve the data because SharePoint takes care of
that. You can use a 'Receive' data connection to retrieve the data from the
SharePoint library.
1. Add a new data connection, and select following options:
Create a new connecton to > Receive Data

2. Select 'SharePoint library or list' and rest is straight forward.
