I was just wondering, if it is possible to convert the forms to pdf format?
What I require is that after the form has been filled out by another person
and they submit to the designated email address, is there any way to make it
into a pdf instead of the forms attachment in the email?

We require the forms to be unable to be changed once a staff member has
filled out their details.

What you'd like to do is definitely possible, but not without writing code.

If you're using the InfoPath 2007 client application, you can write code to
export the current view to PDF
(http://enterprise-solutions.swits.net/infopath2007/export-infopath-2007-form-to-
pdf.htm
).
If you then want to send the PDF as an attachment in an email, you would have
to write Outlook automation code to attach the file to the email and then
send it off. Something like in this article
http://enterprise-solutions.swits.net/infopath2003/convert-infopath-form-into-wo
rd-doc-send-email-attachment-outlook.htm

but then using a PDF file instead of a Word document.
