Export from Infopath to Excel - new to Infopath

I wish to use multiple Infopath forms to collate data into a single Excel
spreadsheet... and I'm having problems finding information on the website.
Can anyone help?

I realise there's the export function but I can only export one form to one
sheet.

You can try the merge function to aggregate multiple forms.

Typically I use a backend database to collect all of my form data for
aggregation and analysis.
