To view an xml file created from an InfoPath form template you will need to
have InfoPath. There is currently no web viewer available for InfoPath.
What happens is that the xml contains a processing instruction indicating
that it is associated with InfoPath. A second processing instructions holds
the location of the template used for rendering the form.
One way around this though is to export the form to mht and save the mht to
sharepoint.

these guys have a solution:
http://www.infoview.net - pass your form through the demo to see what you
think!
