I'm thinking about designing a database and using InfoPath to capture the
data.

Here's the idea. Techs in the field will complete a form after they're
finished with a job and submit it to a database. If they aren't online at
the time I'd like the data to be held on their laptop for when they are
online.

Would InfoPath handle this correctly?
