I am working through the InfoPath Training labs and when I try to publish a
form to MySite on my test SPS server, it appears to publish (I don't get any
error messages), but I don't see the form in MySite. Any idea what might be
wrong?

When you publish, there is no form yet created. Only the form "template" was published. You will need to create your forms from the template. There should be a button at the top of the form library that reads "Fill Out This Form". Click that to create your first form from your publised template.
