When using an infopath form to submit a purchase order.
What would your choice be for receiving that data and organizing at the
developer end?

For example deploy the infopath form and use an excel, word, or access end
for retreiving the form data for processing and keeping track of.

Where should i start.

I have created several databases and experimented with InfoPath and MS
Access for one of them. I really liked the way the two work together
b/c InfoPath allows you to create a new data connection from an
existing database (Access) and allows you to import the tables from
Access into InfoPath.
