I am trying to create a form to use as a receipt that i can email to
different people time after time.

Create your form (receipt) and have as one of  the fields their email addresses

Then create a data connection that submits the form to that addresses

Thanks Art, but the email addresses will change all the time - these will be
going out to different people.  Also, when I email it to myself, (another
computer without Infopath), the information changes?

if you can define the logic of who gets the form when (think of routing a
paper form), the same logic can be coded in InfoPath
