how do I turn on document "editing time" found on advanced proper.

I am wanting to track the time spent on creating and editing a document.  I
have not been able to find where I can turn on/off this function

What "function" do you want to turn on and off?

Why not just enter start and end times in a spreadsheet, then add up the
differences?

Although it's listed in the Properties dialog box, the Total Editing
Time property is available in Excel. There's information in this MSKB
article:

 XL2000: Revision Number and Total Editing Time Boxes Are Empty

You could manually or programmatically record the times that you open
and close the file, and calculate the total time.
