I get emails from a form on a website, this is how they appear in
outlook 2003: http://img118.imageshack.us/img118/1194/untitledwe0.jpg
How do I use the included email in the message body as the reply-to
address automatically? Thanks.

See if the form can be modified to use the email address as the Reply-To address in the messages that the web site is sending. AFAIK, that's a pretty standard feature. If that can't be done, check out the tools here: http://www.slipstick.com/addins/extract.asp
