how do I remove a name from the global address list?

This has to be done at the Exchange/AD end. Do you have that access?

I do. However I am new to the system and there was no one to train me. I
don't really know what I'm looking for. On the Admin desktop, go to MS
Exchange, then server manager, then.......?

Actually you do it from the employee's profile in AD. Click on the Exchange
Advanced tab and check the box that hides it from the address book. Note that
for it to be removed from the GAL, you have to wait for replication to take
place. It could take a couple of hours.
