On sign-in, choose profile, how do you edit or delete names there?

Hi, I am not sure if I made my question clear.  When you click on the icon
for Mircrosoft Outlook you get the "windows box"  that says Choose Profile
and then a dropdown menu with different user names.  Some of the users don't
exist anymore, I can add a new one, but how do you delete an old one?  I
apoligize my terminology is probably all wrong.

In the Control Panel, click on the Mail Applet. Click on Show Profiles. It
should show you all the profiles there. You can remove any of the ones you
want.

Okay...well that kinda fixed my problem and I got all the right names in the
drop down menu now.  But I deleted a profile, my main one, with a lot of
saved emails I needed... How can I retrieve them? I guess all I really wanted
to do was to change the names in the drop down box.  I didn't think before I
hit remove profile.  I just need one of them back, is it possible? and can
you walk me thru it?

Simply create a new profile and give it the name you choose. Are you
connecting to Exchange or are you using a PST for your mail?
If you use a PST, just point the new profile to your PST.
If you connect to Exchange, make sure you resolve the mailbox name and
server and make sure you set authentication to NONE.
