how to hide an e-mail sent date & time in the headers fields ?

The date and time of a sent e-amil message appears in the common fields in
e-mail headers, based upon computer clock on the sender's computer. How can I
hide this information ? Thank you.

Write your own SMTP server program.

Thank you very much. I am not sure to understand what is your recommendation
(sorry i am not an expert :-) I would highly appreciate more info about how
to do that.

Do you mean in the Sent Items folder?  If so, right-click that field and
choose "Remove this Column".

you can't hide just that - you can hide the complete header in the reading
pane.
