How can I change column format for all folders?

Somehow, all of the category headers in my all of email folders got changed a
couple of days ago. I'd like to know if there's a way to reset them all to
how I had them, without having to do it one at a time.

You edit categories in the Master Category List.

Re read your question - it doesn't make sense to me
