I have system log data that is batched processed hourly.  This data is
emailed to a client.  The client is using Office 2007 on Vista Ultimate.
When I try to save the email as text Outlook adds cr in the middle of the
data.  It looks like the cr are inserted as if it were formatted to be
printed.  How can I get Outlook to stop inserting these cr?

I don't get the cr when saving a html email.
What format is the mail in?
Might whatever is generating the logs be adding the cr?
compare saving a regular email to one you are heaving the problem with.

The email is in plain text.
Outlook 2007 displays it correctly but when it is saved as a text file that
is when it inserts the cr in the 78 position.  It definitely looks like it
is formating it for print.  The average line length is 108.  If I open the
same email in Outlook 2003 and save it as text, it is saved correctly
without the cr.  Same thing if I open the email in Thunderbird and save it
as text everything is fine.  It is only Outlook 2007 that is inserting the
cr.  We have tried this on a couple of different machines running Office
2007.

You can try turning off the hard wrapping of lines. This is for Outlook 2003
so it might need modification for Outlook 2007 (oddly yours works with
2003):

I think you'd want wraplines to be 0
