I've just upgraded to Office 2007 and lost the connection between my 1000+
contacts (all there) and email.  I've read all of the posts about this
problem but I'm not able to follow the instructions to "remove" my addessbook
and/or "make this folder an addressbook" because for some reason those
options are visible but disabled.  HELP!

Do you  have the Outlook Address Book service loaded and have you set the
Contacts folder as an Outlook Address Book?

http://support.microsoft.com/kb/197577/en-us
"Show this folder as an e-mail Address Book" check box is dimmed in Outlook
Contact folder properties

If this doesn't help, try creating a new Outlook profile:

How to create a new e-mail profile in Outlook 2007 and in Outlook 2003
