My sent items are being deleted automatically when I want to keep them.  Why
is this and how do I prevent it from happening?

I don't think so.  I have taken care to ensure that all sent items are
retained.

I think they are being simply deleted.  They are certainly not in the
archive folder.

Double check the auto-archive properties to make sure you're not set to have
the items deleted instead of archived.
