I don't want text to adjust when the window is adjusted. How?

When sending an email, is it possible to "freeze" the text of the message so
it doesn't adjust when the window is adjusted?

I don't believe so.  Unless you send your text embedded in an image or a
PDF, the closest you can come is HTML, but even then the reader's rendering
engine has flexibility in how it's presented.
