missing "from" field within Microsoft outlook 2003

I am missing my "FROM" field within Microsoft outlook 2003.

in the new message window - view/from field

Right click on subject or date up where from should be. You will see field
chooser, left click on there. Now find the field from and drag it up on the
bar with the others.

Why do you think you need to see one?  The from field has meaning only when
used in an Exchange environment.
