After furious head scratching, LWise asked:

If you open one profile's PST in the other profile, you can see everything
that PST contains in both profiles.

Thanks Brian. I have been playing around with the PST files. I don't know
how to open another pst in a different profile. I was thinking about
combining profiles and using 2 contact folders to keep those separate &
setting rules to manage the different email accounts. (should make it so I
could sync everything with my PDA).
Would appreciate your advice on which would be best & the steps to do so.

Open Outlook using one profile. Click File>Open>Outlook Data File. Browse
to the PST used by the other profile, select it, and click OK. You'll now
see both PSTs in the one profile.
