I use Outlook 2003 and Yahoo Mail Plus. If I send an e-mail directly from my
yahoo account it is not reflected in Outlook "sent" items. Is there any way
to change this?

No.  Since your connection to Yahoo is vial POP and since POP doesn't know
anything about folders, there's no way to accomplish what you seek.  Now, if
Yahoo supported IMAP accounts like Google mail does, that would be another
story.
