Word count

I often edit articles that are emailed to me. Since I'm viewing them in an
email I no longer have their word count displayed. Is it possible to get a
word count in an email?

Depends on what mail reader you're using and that can depend on your Outlook
version.  You specified neither.

And are you opening the message in its own window or are you viewing it in
the Reading Pane?
