I would like to use the email format I saved automatically when I start a new
email.  I have selected a stationary (Technical) and changed the font I've
selected to be used every time (selected "always use my fonts").  I have even
saved this as a theme.  However, no matter what I do, when I start a new
email, the wrong font shows up (Arial) and I have to select the "Clear
formatting" button to start typing in the font I want or reselect the font
from Arial to the one I want.  I have gone to offline and online help to no
avail.

I would appreciate some help.  This has become frustrating.

And you don't think mentioning your Outlook version and mail editor are
important?
