Which kind of items? Tasks or flagged mail items?

the items that do not show are tasks that have been marked as completed.
I've tried marking them completed by every method--i think--but none show up
on the completed tasks pane.

Where exactly are you looking now?
In the Tasks Navigation did you select To-Do List or Tasks?
Do the items still show in the Simple List view?
Did you already reset the Completed Tasks view?
