How do you shut off the default Outlook 2007 option to delete sent messages
as you close Outlook?

The what now?

No such option that I'm aware of, and defintely isn't a default setting.

What type of mail server are you using?

Look at your view settings for a filter for the Sent Items folder. Make sure
it is set to view all messages, not just unread ones. Make sure you are
saving sent messages to the Sent Items folder and you are not auto Emptying
the Deleted Items folder when closing Outlook.
