How do I show "Undisclosed-Recipient" in the To: address line?

I occasionally get e-mail with "Undisclosed-Recipient" in the To: address
line. How do I change my To: line to reflect "Undisclosed-Recipient" so it
doesn't show who I sent my e-mail to?

That is not a function of Outlook but of the mail server you are using. You
can of course create a contact named that way and add your own address to
it.
