Code Incoming Msg with Color

I am using Outlook 2003
I know I have done this before, but can not remember how.  I want message by
certain people color coded so that I can find them faster or respond to them
faster.  I think I have to create a rule that says something like - when
"John Doe" send "me" an email color it red.  I went into the create a rule
icon but couldn't find where I could specify a color.  Does anyone know what
am I doing wrong?  I would appreciate any help you can give me or at least
point me in the right direction to find help.

I did this accidentally and would like to remove the color. I can't find the
button to change it back. Help!
