When we reply to messages received in Plain text, the email editor defaults
to Notepad (with code) instead of Word on one of our computers. How do we
ensure the Word Editor signature appears on the reply?

There's no way for Outlook to start Notepad as the mail editor.  Outlook
will either use Word as the ediotor or it will use its own built-in editor.
Notepad is simply not an option.
