In my inbox, my headings have changed from Today, Yesterday, Last Week
....etc. to now it just has one setting as Older. I have no idea why it is
like that and I would like to change it back to Today, Yesterday...etc.

I would first suggest clicking the HELP option on the Menu bar.  Then
clicking Office Assistant.  Type the words TODAY YESTERDAY just like that.
go to Customize Outlook today and find your option there.

Check your Windows clock settings to make sure all are correct.
