What exactly gets indexed when I turn this on?  Is it my Outlook database or
my complete hard drive?  Third question, is there a way to control the output
of the general search(non-Instant Search).  When I do a search it starts by
returning the oldest messages first.  I would like to get the newest messages
first.

1) By default it also indexes certain folder on your hard disk
2) You can specify what to index in Control Panel-> Indexing Options
3) No, it starts the search from the first item that was written to the
pst-file to the last item. You cannot reverse this.
