Does it eventually come back again or do you need to kill Outlook then and
restart it?

Thanks for your input - it does eventually come back again or as you say I
can kill Outlook 2007 or restart; but it will suddenly stop responding again!
I have looked at: http://www.howto-outlook.com/faq/outlookdoesntstart.htm
but nothing there seems to fit the problem. The problem seems to be when I
am looking at an email.

Same troubleshooting can apply as instructed in the article.
To start, I would check how Outlook performs when you run it in Outlook Safe
Mode. If it runs smoothly now, it most likely caused by an addin.
Since when do you have this issue?
What changed since then?
