Email from some places, not all,  appear too light to be seen. Only thing
showing are links.

When I click on some received emails there is no content other than links,
or the content is soi lkight it is unreadable. How can I stop that and fix it?

If these messages are in HTML, then the sender chose a
background/foreground color combination that is difficult to read.
a. ask the sender to use better color combinations;
b. select/highlight the entire message - it may be easier to read;

This is in Outlook 2003.
