I hate the headings TODAY, YESTERDAY in Outlook. How do I change the heading
to read the Date, or TODAY - May 22, 2008?

You can't add the date it to. You can disable groupings (customize view)

For individual folders, I've done this by going to the "View" menu, then
going to the "Arrange By" menu, then un-highlighting / de-selecting the "Show
in Groups" option.
