How to change or add field names in phone drop down list

In a New Contact Screen, there are several phone number fields with buttons
that provide a drop down list to choose what a particular number is, e.g.
Assistant, Business, Business 2, Business Fax, Callback, Car.....  How can
these names be changed (e.g. "Business 2" changed to "Home Office"), or how
can additional fields be added to this list?
