I am just learning Outlook Business Contact Manager and currently use ACT. Is
there a way that I can edit or create my own sales stages in new
opportunities?

Chris,

BCM is very different from ACT in this regard.  Currently, you cannot
customize BCM's forms.  "One size fits all" is the reality that you are going
to have to live with for now until "maybe" this will be improved upon in the
next BCM release sometime late this summer.
