We have three computers on a network with a server, is it possible that I can
update my boss's contact lists from another computer on the network?

If everyone has a private database, you can export from one machine and
import onto your boss's machine.

If you want access your boss's database directly, he can share out his
database and add you as a user. Then, from the other machine, create a new
mail profile, and then in the first use wizard (when you open Outlook with
the new profile) specify that you want to use the database on your boss's
machine.
