Is there a way to manage a contacts subscription to different distribution
lists from the contact card itself, rather than going into the different
distribution lists and manually making changes?

You may want to use categories for this and use mail merging to send emails
to all those contacts in that category.

How do you use categories to make different distribution lists for merge
mailers?  Can you "slice and dice" the contacts in "Accounts" or "Business
contacts" folders or do you have to click one name at a time in the merge
mailer?

You can CTL+Click the mouse on multiple contacts in the Contacts view and
then click on Categorize to apply that category to all of them.
