Opportunities 'assigned to' not populating

Each opportunity has an 'assigned to' user BUT the reports and opportunities
are showing the field in that column as blank - the report reads all
opportunities are not assigned. How can I 'refresh' or recapture this
information from the opportunities?

Does the AssignedTo field have a value when you open the Opportunity
form?

Yes it does - I went digging deeper though and found there is an 'assigned
to' and and 'assigned to user' field to customize the view. I still don't
know how/why it got changed. Are the default views not user specific?

I don't think the folder views are user specific.
