When I attempt to add an appointment in the future by double clicking the
date it adds the appt in today.  Is there a setting??

No, you need to set it manually.

After furious head scratching, Lee asked:

This is actually my bosses machine, mine works correctly.  If I go to March
and click on a date I can add an appointment and it records it on the date I
selected.
