How to send mtg requests without having meeting show in my calenda

We use Exchange2003/Outlook 2003. I schedule meetings for officers (using an
officers distribution list and a Conference Room as a resource). I would like
to have the meeting NOT show in my calendar.
It does as I am the organizer. I do not have the option to decline any
invitation since I scheduled the meeting. I tried to schedule on behalf of an
officer but the officer not longer had the option to decline as the
organizer. Any work around?

We have our conference room booked using our main office generic mailbox in a
calendar called conference room. I schedule from that  conference room
calendar and that way I invite the attendees, schedule the room and track
invitations and keep in out of my mail box... but you may not have a main
office mailbox....
